No-Bake Granola Bars

A fairly basic granola bar recipe that can be easily customized. Just make sure to keep the total wet and total dry ingredient amounts the same!
Ready to cut and eat - I mean store!
2.5 cups any dry cereal (I've used rice krispies and cheerios)
2 cups quick oats
1/2 cup raisins or other dried fruit
1/4 cup chopped peanuts or other nuts (optional)
1/2 cup chocolate chips (optional)

1/2 cup brown sugar, packed
1/2 cup light corn syrup (I've successfully used honey as well)
1/2 cup peanut butter (even better with crunchy peanut butter)
1 tsp vanilla

Spray or lightly grease a cookie sheet and set aside.

In a large bowl, combine cereal, oats, raisins and chocolate chips.

Over medium heat, combine brown sugar and corn syrup. Heat until it is just boiling. Add peanut butter and vanilla. Stir until peanut butter is melted and remove from heat.

Pour sauce mixture over dry ingredients and mix thoroughly with a wooden spoon. It's going to seem like it's too crumbly, just keep mixing. It takes a good 5 minutes to really get all of the oats coated. Don't be afraid to use your hands if necessary!

Press onto cookie sheet to desired thickness and allow to cool completely. Cut into bars/squares. Store in a tupperwear container for up to a week. I like to put parchment ebtween the rows to make sure they don't stick together.

Oatmeal Raisin Cookies - makes about 5 dozen
(modified from this recipe - less sugar, more spices)

3/4c. butter, softened
1/2c. white sugar
1/2c. packed brown sugar
2 eggs
1 tsp. vanilla extract
1 1/4c. all-purpose flour
1 tsp. baking soda
1 tsp. ground cinnamon
1/2 tsp. nutmeg
2 1/2c. rolled oats
1 c. raisins (soak in hot water first)

Preheat oven to 375.
Cream together butter and sugars.
Add eggs and vanilla extract and beat together until a bit fluffy. 
In a separate bowl, mix flour, soda and spices.
Gradually, add and mix dry stuff with the wet ingredients.
Finally, drain raisins well and add them and oats to the batter.
Mix until everything is well combined.
Drop 1-2 tbsp of cookie mix spaced out on the sheet (12-15 cookies/tray)
Cook one tray at a time for 12 minutes with silicone sheet or 8-9 minutes without - until edges are starting to turn golden brown. Do not overcook or your cookies will be crispy!
Let sit on tray for 5 minutes and then put them on a rack or some newspapers to cool.
Note: The cookies will still be soft when you transfer them from the tray so handle them gently! They firm up a bit when cooling but will stay nice and chewy for days :)

BBQ Chicken and Onion - freezer meal
When served with rice or potatoes and a salad, this is enough to feed two adults, two toddlers and a baby.

2-3 chicken breasts cut in slices or chunks
1/2 a spanish onion cut into large chunks
1 c. BBQ sauce (any flavour)
1.5-2 tbsp. soya sauce
1 tbsp. lemon juice
2 cloves of garlic, minced
pinch of salt and pepper

You can cook this in the slower cooker on high for 1.5-2 hours. I'd add about 1/3c. water to it first. Otherwise, it can be cooked with veggies in a wok on the stove. It's good with broccoli, corn, celery, carrot slices and onion.

This freezes well just take it out the night before and let it thaw in the fridge.
A large freezer bag can probably hold 2.5-3 batches of this if you ever needed to have a bulk meal ready.
